Tips for Cooking with Eggs

Eggs are an ingredient in many dishes. When a recipe calls for eggs, they are usually referring to large eggs. Eggs can be purchased medium, large or extra large. When adding eggs to another dish, break the eggs in a separate bowl to make sure none of the shell is in the dish. If a recipe calls for egg whites and uses no yolks, yolks can be placed in the refrigerator covered in vegetable oil and will be good for a few days. It is usually better to use eggs that are at room temperature especially if baking with them.

When boiling eggs it is best to put a little vinegar in the pan with the water. If the eggs should crack, the vinegar will stop the eggs from spreading. When boiling a large quantity of eggs, add a few drops of food coloring. This makes the hard boiled ones easy to locate. When boiling eggs, stir the eggs during the boiling time so that the yolks are nearer the center of the egg. This is good to use when making deviled eggs.

Cooking with Cheese

Cheese and pasta seem to go together in a variety of recipes. Cheese that has turned hard can be softened by soaking it in buttermilk. To make buttermilk, place one tablespoon of cider vinegar in a one cup measuring cup and add milk to make one cup. Cheese slices better with a dull warm knife. To store leftover cheese place it in a container with a tight fitting lid and add a few sugar cubes. For ease in cleaning a cheese grater, brush the grater with oil before using.

Cooking Pasta

Pasta comes in a variety of sizes and shapes. However, other than the cooking time, the preparation is the same for all types of pasta. The manufacturer’s directions should be used for cooking times. Pasta will stick together less if vegetable oil is added to the water before cooking the pasta. Cook pasta in a large pan, but place the pasta in a fryer basket, which will make removal and draining much quicker. Before boiling the water, rub shortening around the top of the pasta cooking pan to lessen the chance of a boil over. Pasta should be run under hot water to prevent it from sticking.
